Salted Duck Egg (Itlog Maalat)



I just want to post here how we can make 'itlot maalat' much simple kaysa sa mga gawa ng taga Pateros (this town is know to be the itlog maalat capital).
Just soak the egg (eggs should be from a duck) in a super saturated salt mixture, syempre water and salt lang naman yan yong tipong sa sobrang saturated ng mixture eh hindi na matunaw-tunaw ang salt. Wait for 1 weeks then boil the eggs (parang naglalaga ka lang ng itlog) then if you want you can paint it with color red para talagang mukhang itlog maalat.

Naalala ko nga yong ka opis mate ko na taga Pateros na laging nagdadala ng itlog maalat (also balot), lalo na kung yong itlog na malangisngis pa (it means bagong gawa pa yong itlog). Sarap nyan yong maraming kamatis then bagong lutong kanin... hmmm sarap, sarap kumain...., kung hindi naman gaanong kaalatan yong itlog pinapalaman pa namin sa pandesal ang pula ng itlog nito grabe.. sarap talaga... ginutom tuloy me...
